- 20 oz (1 ¼ lbs) boneless, skinless chicken breasts
- 2 tbsp all-purpose flour
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp sweet paprika
- ½ tsp salt
- freshly ground pepper to taste
- 1 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 3 garlic cloves, minced
- 2 tbsp parsley, freshly chopped
Instructions
- Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
- Place the chicken in a bowl and sprinkle the flour, basil, paprika, oregano, salt, and pepper. Toss to coat the chicken evenly.
- Heat a large cast iron skillet over medium-high heat, adding the olive oil and 1 tbsp of butter. Once melted, add the chicken in one layer.
- Cook the chicken without moving it for about 3 minutes, then flip and cook for an additional 2 minutes.
- Add the remaining butter, minced garlic, and parsley, cooking for one more minute until the chicken is cooked through.
- Serve immediately while hot, alone or with your choice of sides.
Notes
For added flavor, marinate the chicken in the herbs for a few hours before cooking.
Pair with a fresh salad or rice for a complete meal.
Adjust the seasoning to taste if preferred.
