Ingredients You’ll Need

  • 2 ears of corn, husk removed: Fresh corn adds sweetness and crunch; feel free to substitute with frozen corn if necessary.
  • ½ pound asparagus: Tender asparagus brightens the salad; trim the woody ends for best texture.
  • 1 cup snap peas: Freshness adds a delightful crispness; snow peas work as a nice alternative.
  • 1 cup orzo or your favorite high-protein pasta: Orzo is perfect for this salad, but you can use quinoa or any small pasta.
  • Extra virgin olive oil: For cooking and dressing, it brings depth of flavor; a light oil also works well.
  • 1 bunch of chives, thinly sliced: Chives lend a mild onion flavor; green onions can also be substituted.
  • 2 cups arugula: Bitter yet peppery, arugula balances the sweetness; you could use spinach for a milder effect.
  • ¼ cup pepitas: These pumpkin seeds add crunch; sunflower seeds are a great substitute.
  • Red pepper flakes, optional: A hint of heat enhances the flavor but can be left out for a milder dish.
  • Kosher salt: Essential for enhancing flavors; sea salt can also work well.
  • 4 garlic cloves: Fresh garlic adds aromatic flavor; use garlic powder in a pinch.
  • 1 shallot, roughly chopped: Shallots provide a more subtle onion flavor; you can substitute with yellow onion if needed.
  • 1 tbsp Dijon mustard: It gives the salad dressing a lovely tang; any mustard can be used if you enjoy its flavor.
  • 1 tbsp white balsamic vinegar: Brightens the vinaigrette; apple cider vinegar is a good alternative.
  • 2 tsp agave syrup (optional): Adds sweetness to the dressing; honey can be substituted for the same effect.
  • Zest and juice of 1 lemon: Citrus brings brightness; limes could be swapped for a different zing.
  • 1 cup fresh basil leaves, lightly packed: The star of the dressing, basil imparts a fresh aroma; parsley could work in a light capacity.

How to Make Spring Orzo Pasta Salad with Creamy Basil Vinaigrette

  1. Prep the Vegetables: Clean and trim your vegetables. Cut the corn kernels away from the cob using a sharp knife. For the asparagus, remove the woody ends (about 1-2 inches) and slice them into ¼ inch pieces. Prepare the snap peas by trimming the ends and pulling away any strings if necessary, then slice them thinly at a bias.

  2. Cook the Orzo: Bring a medium pot of water to a rolling boil and generously salt the water. Cook the orzo until it’s al dente according to package instructions. Drain well, then transfer the pasta to a large mixing bowl.

  3. Prepare the Corn: In a medium-sized sauté pan over medium-low heat, add about 1 tablespoon of olive oil. Once heated, add the corn and spread the kernels to cover the bottom of the pan. Allow to cook undisturbed for about 3-4 minutes until lightly charred. Season with a generous pinch of kosher salt and toss, sautéing for an additional 2 minutes. Once done, transfer the corn to the mixing bowl with the orzo.

  4. Sauté Asparagus: Return the sauté pan to the heat and add the asparagus with a pinch of salt. Sauté for about 3-4 minutes until the asparagus turns bright green in color. Transfer it to the bowl containing the orzo and corn. Next, mix in the snap peas, chives, pepitas, and arugula.

  5. Make the Dressing: In the same pan, add 3 tablespoons of olive oil. Toss in the minced garlic and chopped shallot along with another pinch of salt. Sauté them for about 3-4 minutes until golden and fragrant. Then add the pepitas and toast in the pan for 2-3 minutes until aromatic.

  6. Blend the Dressing: Transfer the oil, garlic, shallots, and toasted pepitas to a blender. Allow the mixture to cool for about 5 minutes. Then add 1 tablespoon of olive oil, Dijon mustard, white balsamic vinegar, agave syrup, lemon zest, lemon juice, and a generous pinch of salt. Blend until smooth; if it seems too thick, add 2 tablespoons of water and blend again. Taste and adjust salt or acidity as you desire.

  7. Combine the Salad: Pour the creamy basil vinaigrette over the salad, tossing everything together until fully coated. Taste again, adjusting with more salt or lemon juice if needed. You can serve it immediately or chill it for later. If you like a kick, sprinkle with some red pepper flakes before serving, and enjoy!

Storing & Reheating

This salad can be stored in an airtight container at room temperature for up to an hour, but for longer storage, keep it in the refrigerator. It can last for about 3 days in the fridge; simply use a glass container for best results. If you want to freeze it, do so without the dressing for up to 3 months. When reheating, use a microwave for about 1-2 minutes, ensuring it’s warm throughout. Keep in mind, however, that the texture of the pasta may change a bit after freezing, so give it a good mix to refresh.

Chef’s Helpful Tips

  • Avoid overcooking your orzo; it should be firm as it will continue to soften when mixed with the dressing.
  • For the freshest flavor, use basil that has been stored properly. Don’t wash it until you’re ready to use it.
  • If the dressing thickens too much after sitting, blend in an additional tablespoon of water to thin it out.
  • Make this salad a day ahead for more developed flavors; just wait to add the greens until serving.
  • Adjust the dressing’s acidity by adding more lemon juice if you prefer a zesty taste.

Spring is the perfect time to enjoy this colorful dish that showcases the season’s wonderful produce. Not only does it taste delicious, but it also nourishes both body and soul. Experiment with different ingredients, and don’t hesitate to make this salad your own! I hope you dive in and enjoy every bite.
