Description

BBQ Shrimp Bowls are a delightful meal featuring succulent shrimp tossed in spices and BBQ sauce, paired with fresh veggies and rice. This quick and flavorful dish is perfect for a healthy dinner, offering a balance of taste and nutrition.


Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp parsley
  • ½ tsp salt
  • ¼ tsp thyme
  • ¼ tsp oregano
  • ¼ tsp cayenne, optional
  • ½ cup bbq sauce, divided
  • 2 mini cucumbers, sliced
  • 1 cup shredded carrots
  • 1 avocado, sliced or diced
  • 2 cups white rice, cooked or substitute with brown rice or quinoa

Instructions

  1. Cook the rice according to the package instructions if not already done.
  2. In a large bowl, combine shrimp with a spice mix made of paprika, garlic powder, onion powder, parsley, salt, thyme, oregano, and cayenne.
  3. Heat olive oil in a skillet over medium heat, add shrimp, and cook until pink, about 4 minutes. Pour in BBQ sauce and stir well.
  4. Assemble the bowls by placing rice in each bowl, adding shrimp, cucumbers, carrots, and avocado on top.
  5. Drizzle each bowl with extra BBQ sauce before serving.

You can use different types of rice or grains as a base for this bowl.
