Description

Ingredients

  • 4 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 3/4 tsp vanilla
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup carrots, shredded

Instructions

  1. Preheat the oven to 350 degrees F. Prepare an 8 x 8 pan with non-stick spray and set it aside.
  2. In a medium bowl, combine melted butter and brown sugar, mixing well.
  3. Incorporate the egg and vanilla into the mixture and stir until combined.
  4. Add flour, cinnamon, baking powder, and salt to the bowl, stirring until everything is well mixed.
  5. Gently fold in the shredded carrots into the batter.
  6. In another bowl, beat the softened cream cheese and sugar together until smooth.
  7. Add the egg yolk and vanilla to the cream cheese mixture, beating until creamy and consistent.
  8. Spread half of the carrot cake batter evenly into the prepared pan.
  9. Dollop half of the cheesecake mixture over the carrot cake batter.
  10. Top with the rest of the carrot cake batter, followed by the remaining cheesecake mixture.
  11. Use a knife to swirl the carrot and cheesecake batters together to your liking.
  12. Bake for 35-40 minutes, until the edges are golden brown and the center jiggles slightly.
  13. Allow the bars to cool completely before cutting into pieces.

Notes

Ensure the cream cheese is fully softened for a smoother texture in the cheesecake layer.
For a deeper flavor, consider adding nuts or raisins to the carrot cake batter.
