- 8 chicken thighs
- 4 cloves of garlic
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1 cup green olives
- 1 cup pitted prunes
- 1 tablespoon capers
- Salt to taste
- 1/4 cup white wine
- Chopped parsley for serving
Instructions
- Peel and chop the garlic cloves, using a mini food processor if desired.
- In a large glass or ceramic mixing bowl, combine the garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, a pinch of salt, and the chicken thighs. Mix well to ensure the chicken is coated in the marinade.
- Cover the bowl with plastic wrap and refrigerate overnight or for at least 3 hours.
- Preheat the oven to 180C/350F. Arrange the chicken with the marinade and ingredients on a large baking pan or divide between two smaller pans to avoid overcrowding.
- Pour the white wine around the chicken, avoiding direct contact for crispy skin.
- Roast in the preheated oven for 50 minutes to 1 hour until cooked through, with an internal temperature of 74C/165F.
- Sprinkle with chopped parsley before serving.
Notes
Marinating the chicken overnight enhances the flavor.
For a more intense taste, consider adding additional herbs or spices to the marinade.
