Description

Chicken Marbella offers an irresistible medley of flavors with olives, prunes, and garlic. This easy dish is perfect for a quick dinner, bringing deliciousness to your table with minimal prep.


Ingredients

  • 8 chicken thighs
  • 4 cloves of garlic
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 cup brown sugar
  • 1 cup green olives
  • 1 cup pitted prunes
  • 1 tablespoon capers
  • Salt to taste
  • 1/4 cup white wine
  • Chopped parsley for serving

Instructions

  1. Peel and chop the garlic cloves, using a mini food processor if desired.
  2. In a large glass or ceramic mixing bowl, combine the garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add the green olives, pitted prunes, capers, a pinch of salt, and the chicken thighs. Mix well to ensure the chicken is coated in the marinade.
  4. Cover the bowl with plastic wrap and refrigerate overnight or for at least 3 hours.
  5. Preheat the oven to 180C/350F. Arrange the chicken with the marinade and ingredients on a large baking pan or divide between two smaller pans to avoid overcrowding.
  6. Pour the white wine around the chicken, avoiding direct contact for crispy skin.
  7. Roast in the preheated oven for 50 minutes to 1 hour until cooked through, with an internal temperature of 74C/165F.
  8. Sprinkle with chopped parsley before serving.

Notes

Marinating the chicken overnight enhances the flavor.
For a more intense taste, consider adding additional herbs or spices to the marinade.
Ensure proper spacing on the baking pan for even cooking.
