Description

This Chinese Chicken Salad is a fresh and flavorful dish that combines crunchy vegetables with tender chicken and a delicious vinaigrette. Perfect for a quick and healthy meal.


Ingredients

  • 3 cups chopped romaine lettuce
  • 3 cups shredded napa cabbage
  • 2 cups cooked shredded chicken
  • 1/2 cup shredded carrots
  • 1 red bell pepper (chopped)
  • 1/2 cup shelled edamame
  • 1/4 cup thinly sliced green onions
  • 1/4 cup chopped cilantro
  • 1/3 cup toasted sliced almonds
  • 2 teaspoons toasted sesame seeds
  • 1/4 cup rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons avocado oil
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons low sodium soy sauce (or tamari)
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon toasted sesame seeds
  • Kosher salt and freshly ground black pepper to taste

Instructions

  1. Combine all vinaigrette ingredients in a jar or bowl. Shake or whisk until well combined and refrigerate until ready to serve.
  2. In a large bowl, combine all salad ingredients.
  3. Pour the vinaigrette over the salad in small amounts, tossing until dressed to your preference. Serve immediately.

Notes

You can substitute chicken with tofu for a vegetarian option.
