- 3 cups shredded napa cabbage
- 2 cups cooked shredded chicken
- 1/2 cup shredded carrots
- 1 red bell pepper (chopped)
- 1/2 cup shelled edamame
- 1/4 cup thinly sliced green onions
- 1/4 cup chopped cilantro
- 1/3 cup toasted sliced almonds
- 2 teaspoons toasted sesame seeds
- 1/4 cup rice vinegar
- 2 tablespoons honey
- 2 tablespoons avocado oil
- 1 tablespoon toasted sesame oil
- 2 teaspoons low sodium soy sauce (or tamari)
- 1 teaspoon grated fresh ginger
- 1 teaspoon toasted sesame seeds
- Kosher salt and freshly ground black pepper to taste
Instructions
- Combine all vinaigrette ingredients in a jar or bowl. Shake or whisk until well combined and refrigerate until ready to serve.
- In a large bowl, combine all salad ingredients.
- Pour the vinaigrette over the salad in small amounts, tossing until dressed to your preference. Serve immediately.
