Ingredients

  • 1 cup long-grain white rice, rinsed
  • 4 cups water
  • 2 cinnamon sticks
  • 2 cups milk, dairy or dairy-free milk
  • ⅓ cup maple syrup, or other sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the rice, water, and cinnamon sticks in a high-powered blender.
  2. Blend for 40 to 60 seconds until the mixture is smooth.
  3. Transfer the blended mixture to a large container, cover, and refrigerate for 8 to 12 hours, or overnight for best results.
  4. Strain the mixture through a nut-milk bag into a pitcher.
  5. Mix in the milk, vanilla extract, and maple syrup, adjusting the sweetness as desired.
  6. Serve over ice and garnish with ground cinnamon or cinnamon sticks.
