The Classic Simnel Cake is a joyous blend of rich flavors and textures, made with dried fruits, marzipan, and a splash of amaretto. This traditional Easter cake is not only simple to prepare but also a delightful treat that brings friends and family together for any occasion.
Ingredients

- 150 g unsalted butter or margarine – soft and at room temperature
- 2 large eggs
- 150 g soft light brown sugar – you could also use dark brown or muscovado sugar
- 150 g self raising flour
- 150 g ground almonds
- 300 g mixed dried fruit
- 100 g glacé cherries
- 225 ml amaretto liqueur – see recipe faqs for alternatives
- 150 g marzipan
- zest of 1 orange
- 2 tsp ground mixed spice
- ⅛ tsp salt
- 410 g marzipan
- a little icing sugar
Instructions
- Roughly chop the glacé cherries (100g).
- Place the chopped glacé cherries and mixed dried fruit (300g) in a large bowl.
- Pour in the Amaretto liqueur (225ml).
- Cover the bowl and let the fruit soak in the liqueur overnight.
Notes
Ensure the butter or margarine is softened before mixing for better incorporation.
For a non-alcoholic version, substitute amaretto with orange juice or apple juice.
Feel free to vary the mixed dried fruits to include your favorites.
