These Cookie Monster Cookies are a delightful treat bursting with flavors from chocolate chips and Oreos. Simple to prepare, they add a fun twist to your dessert table, perfect for gatherings or a sweet midnight snack.

- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cornstarch
- 1 cup unsalted butter, melted
- 1 cup light brown sugar, packed
- 1/2 cup white granulated sugar
- 1 tsp pure vanilla extract
- 2 large eggs, room temperature
- 1 tsp royal blue gel food dye, americolor
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup oreo pieces, 6 whole oreos
- 3/4 cup chips ahoy pieces, 6 cookies
Instructions
- Sift together flour, baking soda, salt, and cornstarch in a medium bowl; set aside.
- Blend 6 Oreos in a food processor until they form small and medium pieces; repeat with 6 Chips Ahoy cookies and set aside.
- In a large bowl, whisk together the melted butter, brown sugar, white sugar, vanilla extract, eggs, and blue food dye.
- Gradually mix in the dry ingredients using a rubber spatula until just combined; then fold in the Oreo pieces, Chips Ahoy pieces, and chocolate chips.
- Preheat oven to 350°F. Line two cookie sheets with parchment paper; let the cookie dough rest for 10 minutes.
- Scoop cookie dough using a large cookie scoop and place 6 balls per cookie sheet.
- Bake for 13-15 minutes until edges appear set; they will not turn golden due to the blue color.
- Top each cookie with an Oreo piece, a cookie piece, and extra chocolate chips immediately after baking. Allow cookies to sit on the hot pan for 5 minutes before transferring to a cooling rack.

Letting the dough rest helps improve texture and spread.
Ensure eggs are at room temperature for better emulsification.
