Description

These Cottage Cheese Brownies are a delicious fusion of fudgy texture and high protein. Combining cottage cheese, cacao, and almond flour, they provide an easy dessert perfect for satisfying your sweet tooth while staying healthy.


Ingredients

  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it.
  2. Blend the cottage cheese until smooth, resembling thick yogurt, and set aside.
  3. In a large bowl, whisk the eggs, vanilla extract, coconut sugar, and maple syrup; then mix in the cottage cheese until smooth.
  4. Combine the almond flour, cacao powder, and baking soda into the mixture and blend until a smooth batter forms.
  5. Gently fold in the chocolate chips, reserving some for topping, if desired.
  6. Pour the brownie batter into the prepared baking dish and spread evenly. Top with remaining chocolate chips.
  7. Bake for 24–26 minutes, checking with a toothpick for doneness (should come out with a few moist crumbs).
  8. Allow the brownies to cool in the pan for 15–20 minutes before slicing.

Notes

These brownies are best enjoyed fudgy; avoid overbaking for optimal texture.
You can substitute the almond flour with whole wheat flour for a different flavor profile.
Feel free to add nuts or dried fruit for extra texture.
