- 1/2 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 3 cups confectioners' sugar
- 2 tablespoons meringue powder
- 1/4 cup room temperature water
- 1/2 teaspoon vanilla extract

Instructions
- In a large mixing bowl, cream butter and sugar using a hand mixer on medium speed until light and fluffy, about 2 minutes.
- Add the egg and vanilla extract, and beat until well combined.
- Turn the mixer to low speed, add baking powder and salt, and gradually mix in the all-purpose flour until the dough comes together.
- Form the dough into a ball and wrap in plastic wrap. Freeze for 30 minutes or refrigerate until firm (at least 1 hour).
- Preheat the oven to 350°F and line a half-sheet baking pan with parchment paper or a silicone baking mat.
- Remove the dough from the refrigerator and let it sit for 5-10 minutes at room temperature.
- On a lightly floured surface, roll the dough out to 1/4-inch thick. Use an egg-shaped cookie cutter to cut out shapes.
- Transfer the cookies to the lined baking sheet, spacing them one inch apart. Re-roll scraps and repeat.
- Bake for 8-10 minutes until the edges are lightly golden. Let cool for a few minutes, then transfer to a wire cooling rack to cool completely.
Notes
For vibrant colors, use gel food coloring for icing.
Make sure the cookies are completely cooled before decorating to prevent the icing from melting.
