Description

These Easy Confetti Cookies are a delightful treat that impresses with their flavor and vibrant colors. Made with white cake mix, they’re simple to prep and irresistible for cookie lovers. Perfect for parties or just a sweet craving!


Ingredients

  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts. Mix until a thick dough forms.
  3. Fold in the rainbow sprinkles gently without over-mixing. The dough will be sticky and tacky.
  4. Let the dough rest uncovered for about 5 minutes to allow the cake mix to absorb moisture. Test the dough by pressing a finger into it; it should not stick to your finger.
  5. Use a medium cookie scoop (size #40 or 1.5 Tbsp) to portion out the dough.
  6. Roll each cookie ball in extra sprinkles, pressing gently so they adhere on all sides.
  7. Place the coated dough balls on the prepared baking sheet, spacing them about 3 inches apart. Bake for 10-12 minutes until edges are set but the center appears slightly underdone.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For best results, ensure the butter is not too hot when mixed with the cake mix to avoid melting the sprinkles.
Experiment with different types of sprinkles for unique variations in appearance and flavor.
