Ingredients
Scale
- 2 Yellow sheet cake
- 2 Chocolate sheet cake
- 1 Cotton candy cake
- 10 cups American buttercream frosting (tinted yellow with gel food coloring)
- 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
- 1 batch Rice krispie treats (can also use store-bought)
Instructions
- Bake 2 yellow sheet cakes (9×13), 2 chocolate sheet cakes (9×13), and a cotton candy dome cake (5 inch diameter). Save leftover cotton candy cake batter for cupcakes.
- Allow the cakes to cool completely.
- Prepare yellow buttercream frosting while the cakes are baking and cooling.
- To create the cap cake, place the dome cake on a cake board and frost it smoothly with buttercream. Chill for 20 minutes. Roll out black fondant and cover the chilled cake. Cut excess fondant off with a pizza cutter. Insert a bubble tea straw in the center.
- Cut a square piece of cardboard for the cap and color the edges with a black edible marker. Spread a thin layer of icing on top and cover with black fondant. Trim excess with a pizza cutter.
- Cut a small circle from fondant. Brush corn syrup onto the center of the cardboard, attach a folded ribbon, and place the fondant circle on top, pressing gently to adhere.
- Attach the prepared cardboard piece on top of the dome cake using melted chocolate or royal icing. Steam to remove powdered sugar residue.
- For the edible diploma, roll rice krispie treats into a cylinder. Ice it and wrap in white fondant, trimming excess.
- Cut out 2 circles from white fondant and stick them to the ends of the diploma with icing. Wrap a red ribbon around it.
- Assemble the cake by placing the two chocolate sheet cakes side by side on a large board and icing the top. Place the yellow sheet cakes on top and smooth out the icing.
- Use a piping bag with yellow icing and a star tip to decorate the sides and top with roses.
- Decide where to place the diploma and cap, and add dowels or bubble tea straws for support before placing them on the cake.
- Cut letters for 'Congratulations Class of 2024' using cookie cutters and adhere them to the cake board with icing. Enjoy.
Notes
Ensure cakes are completely cooled before frosting to avoid melting the icing.
Use colored gel for buttercream tinting for a vibrant appearance.
Feel free to customize the diploma colors and design to match the graduation theme.
