Instructions
- In a large bowl or measuring cup, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and sugar.
- Add in buttermilk, eggs, and vanilla extract, mixing just until combined. It's okay if there are small lumps.
- Allow the pancake batter to rest for 10 minutes.
- Preheat a large skillet or griddle on medium heat.
- Coat the surface with non-stick spray or a little butter/oil.
- For each pancake, ladle 1/3 to 1/2 cup of batter onto the griddle.
- Cook until small bubbles form on the pancake surface, then flip and cook until golden brown on the other side.
