Description

These Funfetti Cookies are a delightful combination of flavor and visual appeal. With a simple preparation, these cookies feature a creamy texture and bursts of colorful sprinkles, making them a perfect treat for any occasion.


Ingredients

  • 2 ⅔ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 cup unsalted butter (room temperature)
  • 1 ¼ cups granulated sugar
  • ¼ cup light brown sugar (firmly packed)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 ½ teaspoons vanilla extract (clear vanilla extract for lighter cookies)
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar (for rolling the cookie dough balls)

Instructions

  1. Whisk together flour, cornstarch, baking powder, salt, and baking soda in a medium bowl. Set aside.
  2. In a large bowl, beat together butter, granulated sugar, and light brown sugar on medium speed for 3 to 4 minutes until light and fluffy, scraping the bowl as needed.
  3. Lower speed and add the egg, followed by the egg yolk, mixing until combined. Add vanilla and almond extracts and mix until incorporated.
  4. On low speed, add dry ingredients half a cup at a time until no white streaks remain. Lastly, mix in the jimmies sprinkles until fully combined.
  5. Line a baking sheet with parchment paper. Scoop dough with a #40 scoop (about two tablespoons) and place on the prepared sheet.
  6. Chill the cookie dough in the refrigerator for 2 hours or overnight.

Notes

For the best flavor, use room temperature butter eggs.
Using a clear vanilla extract helps maintain the cookie’s light color.
Chilling the dough enhances the cookie’s texture.
