Description

This Gorgonzola pasta is a delightful combination of creamy cheese, toasted walnuts, and the perfect pasta texture. It’s an effortless dish that satisfies cravings for both comfort and flavor, ideal for a quick dinner that impresses family and friends.


Ingredients

  • 8 oz pasta
  • 2 tbsp olive oil
  • 1/2 cup walnuts, chopped
  • 1/2 tsp salt
  • 1 cup cream
  • 4 oz gorgonzola cheese, crumbled
  • 1/4 tsp black pepper
  • 2 tbsp parsley, chopped
  • 1/4 cup parmesan cheese, grated

Instructions

  1. Cook the pasta in a large pot of salted water until al dente, following package instructions. Reserve ½ cup of pasta water before draining.
  2. Heat ½ teaspoon of olive oil in a skillet over medium heat. Add chopped walnuts and a sprinkle of salt, cooking until golden and toasted, about 4 minutes. Remove and set aside.
  3. In the same skillet, add cream, diced gorgonzola cheese, and black pepper. Bring to a gentle simmer and stir until the cheese melts smoothly, about 3-4 minutes. Turn off the heat.
  4. Drain the pasta and add it to the skillet, tossing to coat it in the gorgonzola sauce. If the sauce is too thick, add reserved pasta water until a velvety consistency is achieved. Incorporate half of the toasted walnuts, adjusting seasoning with salt and pepper as desired.
  5. Serve immediately with a drizzle of extra virgin olive oil, garnish with remaining walnuts and parsley, and add freshly grated parmesan cheese if desired.

Notes

Feel free to adjust the amount of gorgonzola cheese to suit your taste preference.
Using fresh pasta will result in an even more delightful texture and flavor.
Serve with a side salad for a complete meal.
