These Graduation Cap & Diploma Sugar Cookies are a fun and playful treat, perfect for celebrating achievements. With a delightful flavor and straightforward preparation, they make for a wonderful homemade dessert for any graduation party.

- 2 cups all purpose flour (plus more if needed)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter (softened slightly)
- 3/4 cups sugar
- 1 large egg
- 3/4 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 16 ounces white chocolate
- 1/3 cup light corn syrup (plus more if needed)
- food coloring (flesh tone and other color for your grad caps)
Instructions
- Preheat your oven to 350°F.
- In a bowl, combine the flour, salt, and baking powder and set aside.
- Cream together the butter and sugar until light and fluffy.
- Add in the egg, vanilla extract, and almond extract and mix well.
- Gradually add the dry ingredients, stirring until just combined. If the dough is sticky, incorporate more flour as needed.
- Roll out the cookie dough on a floured surface to about 1/8 inch thickness.
- Cut out twelve 3-inch circles from the rolled dough.
- Cut out twelve diamond-shaped caps from the dough.
- Use a triangle-shaped cutter to notch out a triangle from each circle of dough.
- Brush the edges of the diamond-shaped dough with corn syrup and insert it into the notch of the circle, pressing the seams together firmly.
- Bake the cookies for 10-14 minutes until set and the tops are dry.
- Let the cookies cool completely before decorating.
- Reserve 2 tablespoons of white chocolate to color for the tassels.
- Color 2/3 of the modeling chocolate with flesh tone food coloring and the remaining with your chosen color for the grad caps.
- Let rest at room temperature for 30 minutes before rolling out to 1/16 inch thickness.
- Cut out twelve 3-inch circles from the flesh tone chocolate, then do the same with the colored chocolate for the caps.
- Brush a light coating of corn syrup on each cookie and layer the colored chocolate on top, ensuring that the seams stick together well.
- Use colored chocolate to create tassels by rolling it into strands and attaching them to the caps with corn syrup.
Notes
Ensure cookies are completely cooled before decorating to prevent melting.
Experiment with different colors for a more vibrant display.
Use additional flour if the dough is too sticky to handle.
