- 1 cup Flour
- 1/2 tsp Cinnamon
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 1/2 cups Old-Fashioned Oats
- 1/2 cup Butter, Softened
- 1/2 cup Brown Sugar
- 1/4 cup Sugar
- 1 Egg
- 1 tsp Vanilla
- 1 cup Raisins
Instructions
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Stir in the old-fashioned oats and set aside.
- In a large bowl, beat together the softened butter, brown sugar, and sugar until well combined. Add the egg and vanilla, and mix until fully incorporated, scraping down the sides of the bowl as needed.
- Mix in the dry ingredients until just combined, then fold in the raisins.
- Cover the cookie dough and refrigerate for 30 minutes.
- Scoop 1 1/2 tablespoons of cookie dough onto the prepared baking sheet, leaving space for spreading.
- Bake for 10-12 minutes, or until golden brown.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For chewier cookies, add an extra 1/4 cup of oats.
Store cookies in an airtight container at room temperature for up to one week.
