- 16 ounces lasagna noodles (cooked according to package instructions)
- 1 teaspoon kosher salt
- 1 pound ground beef
- 1 small yellow onion (diced)
- 3 garlic cloves (minced)
- 32 ounces marinara sauce
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 15 ounces ricotta cheese
- 1 large egg (beaten)
- 3 cups mozzarella cheese (shredded, divided)
- 1/4 cup Parmesan cheese (shredded)
- 2 tablespoons fresh parsley (chopped)
Instructions
- Preheat the oven to 375°F and spray a 9 by 13 inch baking dish with cooking spray.
- Bring a large pot of water to a boil. Add 1 teaspoon of kosher salt and the lasagna noodles. Cook according to the package instructions, then drain and set aside.
- In a large skillet over medium heat, cook the ground beef until broken up. Add the diced onion and minced garlic, cooking until soft (about 3 minutes). Drain excess grease.
- Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer on low for 10 minutes.
- In a bowl, combine ricotta cheese, beaten egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley until mixed well.
- Add 1/2 cup of the meat sauce at the bottom of the prepared baking dish.
- Lay the cooked noodles out and spread 1/4 cup of the cheese mixture over each. Top with about 1 tablespoon of meat sauce. Roll the noodles and place them in the baking dish, making about 16 roll ups.
- Pour the remaining meat sauce over the roll ups and sprinkle with the remaining 1 1/2 cups mozzarella cheese.
- Cover with foil and bake for 30 to 35 minutes. Remove foil and broil for a few minutes to brown the cheese.
Notes
Cook extra noodles as a backup in case some break or rip during assembly.
Let the roll ups sit for a few minutes before serving to allow the cheese to set.
