Description

This Lasagna Roll Ups recipe features delightful layers of flavor with ricotta, ground beef, and marinara, making it a perfect, easy dinner option for families and food lovers.


Ingredients

  • 16 ounces lasagna noodles (cooked according to package instructions)
  • 1 teaspoon kosher salt
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 32 ounces marinara sauce
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 1 large egg (beaten)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup Parmesan cheese (shredded)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat the oven to 375°F and spray a 9 by 13 inch baking dish with cooking spray.
  2. Bring a large pot of water to a boil. Add 1 teaspoon of kosher salt and the lasagna noodles. Cook according to the package instructions, then drain and set aside.
  3. In a large skillet over medium heat, cook the ground beef until broken up. Add the diced onion and minced garlic, cooking until soft (about 3 minutes). Drain excess grease.
  4. Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer on low for 10 minutes.
  5. In a bowl, combine ricotta cheese, beaten egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley until mixed well.
  6. Add 1/2 cup of the meat sauce at the bottom of the prepared baking dish.
  7. Lay the cooked noodles out and spread 1/4 cup of the cheese mixture over each. Top with about 1 tablespoon of meat sauce. Roll the noodles and place them in the baking dish, making about 16 roll ups.
  8. Pour the remaining meat sauce over the roll ups and sprinkle with the remaining 1 1/2 cups mozzarella cheese.
  9. Cover with foil and bake for 30 to 35 minutes. Remove foil and broil for a few minutes to brown the cheese.

Notes

Cook extra noodles as a backup in case some break or rip during assembly.
Let the roll ups sit for a few minutes before serving to allow the cheese to set.
