- 1 teaspoon brown sugar
- ice
- 2 ounces rum
- 2 ounces pineapple juice
- 1 ounce coconut milk
- ¾ ounce lime juice
- club soda
Instructions
- Place mint leaves and brown sugar in a cocktail shaker and muddle to release mint oils.
- Add ice to the shaker, followed by rum, pineapple juice, coconut milk, and lime juice.
- Cover the shaker and shake vigorously until chilled, about 10 seconds.
- Strain the mixture into a highball glass filled with fresh ice and top with club soda. Garnish as desired and serve immediately.
Notes
For a stronger mint flavor, add more mint leaves.
You can adjust the sweetness by changing the amount of brown sugar to taste.
