Description

This Pineapple Coconut Mojito blends refreshing mint, sweet pineapple juice, and creamy coconut milk. Perfect for celebrating with a vibrant cocktail that’s easy to make and irresistibly delicious.


Ingredients

Scale
  • 3 mint leaves
  • 1 teaspoon brown sugar
  • ice
  • 2 ounces rum
  • 2 ounces pineapple juice
  • 1 ounce coconut milk
  • ¾ ounce lime juice
  • club soda

Instructions

  1. Place mint leaves and brown sugar in a cocktail shaker and muddle to release mint oils.
  2. Add ice to the shaker, followed by rum, pineapple juice, coconut milk, and lime juice.
  3. Cover the shaker and shake vigorously until chilled, about 10 seconds.
  4. Strain the mixture into a highball glass filled with fresh ice and top with club soda. Garnish as desired and serve immediately.

Notes

For a stronger mint flavor, add more mint leaves.
You can adjust the sweetness by changing the amount of brown sugar to taste.
