Description

This Quick Ground Beef and Potatoes recipe combines juicy ground beef with tender potatoes and gooey cheddar for a satisfying meal. Perfect for busy nights, it’s easy to prepare and pack with flavor, making it a favorite comfort food for the whole family.


Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds lean ground beef
  • 2 teaspoons kosher salt, divided
  • 2 cloves garlic, minced
  • 1 medium yellow onion, finely diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • 1 ½ pounds yukon gold potatoes, chopped into ½ inch cubes
  • 1 cup water
  • 1 teaspoon yellow mustard
  • 1 tablespoon worcestershire sauce
  • 4 tablespoons ketchup
  • 2 cups sharp cheddar cheese, grated

Instructions

  • Preheat the oven to 375°F.
  • In a large heavy-bottom skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced onion and ground beef, sprinkling with 1 teaspoon of kosher salt, minced garlic, black pepper, and smoked paprika. Cook for 5-8 minutes until browned and the onion softens, stirring occasionally.
  • Remove the cooked meat and set aside. In the same skillet, add the remaining tablespoon of olive oil and the chopped potatoes, sprinkling with the remaining teaspoon of salt. Cook for 1 minute until fragrant.
  • Add ¼ cup of water, cover, and cook the potatoes, stirring frequently for about 15-20 minutes, until they are tender but not falling apart. If the potatoes stick, add more water gradually, ¼ cup at a time.
  • Once the potatoes are tender, add the cooked ground beef back to the skillet with the mustard, Worcestershire sauce, and ketchup; stir to mix. Add additional water if the mixture appears dry.
  • Sprinkle half of the grated cheddar cheese into the mixture, stirring to combine. Top with the remaining cheese and place the skillet in the oven for 5 minutes, until the cheese is melted. Serve warm with your favorite toppings.

Notes

For a quicker option, skip baking and serve directly from the skillet after adding cheese.
Yukon gold potatoes have a creamy texture that works great in this recipe, but you can also use russet potatoes.
Feel free to customize with your favorite toppings like sour cream or green onions.
