  • 1 loaf Italian bread
  • 1/2 cup softened butter
  • 1 tsp garlic salt
  • 1 pound shrimp, peeled and deveined
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 cup heavy whipping cream
  • 1 cup grated Parmesan cheese
  • 1/2 tsp crushed red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded white cheddar cheese
  • 2 tbsp chopped parsley

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Place the Italian bread cut side up on the baking sheet and spread softened butter over both halves, then sprinkle with garlic salt.
  3. Bake for 8 to 10 minutes, until the bread is lightly golden and crisp around the edges. Set aside after removing from the oven.
  4. Pat the shrimp dry using paper towels, seasoning them with kosher salt and black pepper.
  5. In a large skillet over medium-high heat, heat the olive oil until shimmering and add the shrimp in a single layer, cooking for 1 to 2 minutes per side until golden and opaque but slightly translucent in the center. Avoid overcooking.
  6. Transfer the shrimp to a plate so they can finish cooking in the oven.
  7. In a saucepan over medium heat, melt the butter and add the diced onion, cooking for 3 to 4 minutes until softened and translucent.
  8. Stir in the garlic and cook for about 30 seconds before pouring in the heavy whipping cream, bringing it to a gentle simmer without boiling.
  9. Add the Parmesan cheese, kosher salt, black pepper, and crushed red pepper flakes, stirring until the cheese melts and the sauce thickens slightly, about 3 to 5 minutes. Remove from heat.
  10. Spoon about ¾ cup of the Alfredo sauce over each toasted bread half, spreading to the edges and reserving the remaining sauce for serving.
  11. Arrange the shrimp evenly over both halves of the bread, followed by sprinkling mozzarella and white cheddar cheese on top.
  12. Return the bread to the oven and bake for 8 to 10 minutes until the cheese is melted and bubbly. Broil for 1 to 2 minutes for a golden top, watching closely.
  13. Let the bread rest for 2 to 3 minutes after removing from the oven.
  14. Garnish with chopped parsley, slice, and serve warm with the reserved Alfredo sauce on the side.
