Description

This Tres Leches Cake is a moist and decadent Mexican dessert, featuring a delightful blend of three milks. It’s perfect for celebrations or a sweet treat at any gathering, made easily with simple ingredients like eggs, sugar, and milk.


Ingredients

  • 1 cup all-purpose flour, or substitute 1:1 gf flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 eggs, (large)
  • 1 cup sugar, divided into 3/4 and 1/4 cups
  • 1 tsp vanilla extract
  • 1/3 cup whole milk
  • 12 oz evaporated milk
  • 9 oz sweetened condensed milk
  • 1/3 cup heavy whipping cream
  • 2 cups heavy whipping cream
  • 2 tbsp granulated sugar
  • 1 cup berries, to garnish, optional

Instructions

  1. Preheat the oven to 350 °F and butter a 9×13 casserole pan.
  2. Set up three mixing bowls.
  3. In a large bowl, sift together 1 cup flour, 1 1/2 tsp baking powder, and 1/4 tsp salt.
  4. Separate egg whites and yolks into the other two bowls.
  5. Beat egg yolks with 3/4 cup sugar using an electric mixer on high speed until pale yellow (about 2 minutes).
  6. Stir in 1/3 cup milk and 1 tsp vanilla.
  7. Beat egg whites on high speed until soft peaks form (about 1 minute).
  8. While mixer runs, gradually add in remaining 1/4 cup sugar and continue beating until egg whites are stiff but not dry (about 1 minute).
  9. Pour egg yolk mixture over the flour mixture and gently combine with a spatula.
  10. Carefully fold in the egg white mixture until just blended.
  11. Pour the batter into the prepared pan and smooth the surface before baking.
  12. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Notes

You can add a layer of fresh berries on top for an extra touch of flavor and presentation.
Ensure not to overmix the batter to keep the cake light and fluffy.
Store in the refrigerator if not served immediately to maintain moisture.
