Description

Ingredients

  • 8 large russet potatoes
  • 8 oz cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and bake the russet potatoes until tender, about 1 hour.
  3. Once cooled, cut the potatoes in half and scoop out the flesh into a mixing bowl.
  4. Add cream cheese, sour cream, half of the cheddar cheese, cooked bacon, green onions, garlic powder, salt, and pepper to the bowl.
  5. Mash the mixture until creamy and well combined.
  6. Spoon the cheesy potato mixture back into the potato skins and top with remaining cheddar cheese.
  7. Place the filled potatoes on a baking sheet and bake for an additional 20 minutes, until heated through and cheese is melted.

Notes
