- ¼ cup greek salad dressing
- 1 1/2 teaspoons greek seasoning blend
- ½ lemon juice of

Instructions
- Chop the potatoes into halves, or quarters if they are large, and place them in a large bowl. Cover with cold water and soak for 30 minutes.
- Drain and rinse the potatoes with fresh water.
- Thoroughly dry the potatoes, then transfer them to a mixing bowl. Add the salad dressing and Greek seasoning, tossing to combine.
- Spray the air fryer basket with non-stick spray. Place the potatoes in the basket and air fry at 400°F for 20 minutes, shaking the basket every 5 minutes.
- Taste the potatoes and add more Greek seasoning if needed. Garnish with fresh parsley and a squeeze of lemon juice before serving.
