Description

These Air Fryer Greek Roasted Potatoes are a delightful blend of yukon gold potatoes coated in zesty Greek dressing and seasoning. Easily prepared and cooked in an air fryer, they make a savory side dish that’s bursting with flavor, ideal for quick dinners or a healthy comfort meal.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes into halves, or quarters if they are large, and place them in a large bowl. Cover with cold water and soak for 30 minutes.
  2. Drain and rinse the potatoes with fresh water.
  3. Thoroughly dry the potatoes, then transfer them to a mixing bowl. Add the salad dressing and Greek seasoning, tossing to combine.
  4. Spray the air fryer basket with non-stick spray. Place the potatoes in the basket and air fry at 400°F for 20 minutes, shaking the basket every 5 minutes.
  5. Taste the potatoes and add more Greek seasoning if needed. Garnish with fresh parsley and a squeeze of lemon juice before serving.

Notes

Soaking the potatoes helps achieve a crispy texture.
