Description

This Apple Cider Donut Bundt Cake is bursting with irresistible flavors and simple to prepare. Made with fresh apple cider, warming spices, and a moist crumb, it’s an ideal treat for gatherings or cozy evenings at home.


Ingredients

  • 4 cups (500 g) all-purpose flour
  • 3 cups (600 g) granulated sugar
  • 4 teaspoons baking powder
  • 4 teaspoons apple pie spice
  • 1 teaspoon kosher salt
  • 2 ½ cups apple cider, or apple juice
  • 2 large eggs, room temperature
  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 2 tablespoons vanilla extract
  • ¼ cup apple cider
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons apple pie spice

Instructions

  1. Preheat the oven to 350°F and generously grease a 10 to 12 cup Bundt pan with baking spray containing flour (or use butter and flour).
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, apple pie spice, and salt.
  3. In a separate bowl, whisk together the apple cider, eggs, melted butter, and vanilla until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly thin.
  5. Pour the batter evenly into the prepared Bundt pan.
  6. Bake for 50 to 65 minutes, or until a toothpick inserted into the thickest part comes out with a few moist crumbs and no wet batter. Start checking at 50 minutes.
  7. Let the cake cool in the pan for 10 to 15 minutes, then carefully invert it onto a wire rack.
  8. While the cake is still warm, brush or drizzle ¼ cup of apple cider evenly over it.
  9. In a small bowl, mix sugar and apple pie spice. While the cake is warm, sprinkle this mixture over the entire surface and gently press it in for coverage.
  10. Allow the cake to cool completely before slicing.

Notes

Ensure that the butter is melted and cooled slightly before adding to the wet ingredients to prevent cooking the eggs.
For a richer flavor, consider using fresh apple cider instead of apple juice.
Store any leftovers in an airtight container at room temperature for up to three days.
