Description

These Apple Cinnamon Oatmeal Cookies combine the warmth of cinnamon and the sweetness of apples for a delightful treat. They feature easy prep and wholesome ingredients, making them a wonderful homemade snack or dessert for any occasion.


Ingredients

  • 2/3 cup (160g) unsweetened applesauce
  • 2 cups (170g) old-fashioned whole rolled oats
  • 1 and 1/4 cups (156g) all-purpose flour (spooned & leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (113g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) light or dark brown sugar (i use dark)
  • 1 egg yolk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (90g) finely diced apples
  • 1/2 cup (63g) chopped walnuts (optional)
  • 2 tablespoons (28g) unsalted butter
  • 1/3 cup (80ml) pure maple syrup
  • 1 cup (112g) sifted confectioners’ sugar
  • pinch salt, to taste

Instructions

  1. Place the applesauce in a saucepan and heat on medium until it simmers; stir occasionally until reduced by half, about 10 minutes. Cool to room temperature.
  2. Preheat the oven to 350°F (177°C) and prepare baking sheets with parchment paper.
  3. In a large bowl, whisk together oats, flour, baking soda, salt, cinnamon, allspice, and nutmeg. Set aside.
  4. In another bowl, cream together butter, granulated sugar, and brown sugar with a mixer for about 5 minutes. Add the reduced applesauce, egg yolk, and vanilla, mixing until combined.
  5. Combine the dry ingredients with the wet ingredients, mixing on low speed. Fold in diced apples and walnuts.
  6. Using a cookie scoop, drop mounds of dough onto the baking sheets, spacing them 3 inches apart.
  7. Bake cookies for 14-16 minutes until lightly browned. Let cool on the baking sheet for 10 minutes before transferring to a cooling rack.
  8. In a saucepan, melt butter and maple syrup over low heat, whisk in confectioners' sugar, and add salt to taste. Drizzle over cookies once the icing sets after about 1 hour.
  9. Store cookies in an airtight container at room temperature for up to 2 days or refrigerate for a week.

Notes

For a richer flavor, use dark brown sugar instead of light.
Ensure the butter is softened to room temperature for better mixing.
These cookies can also be stored in the freezer for longer preservation.
