Ingredients

  • ½ cup chopped apple, about 1/2 a large apple
  • 1 teaspoon maple syrup
  • pinch of cinnamon
  • ½ cup old fashioned oats
  • ½¾ cup unsweetened almond milk
  • ¼ cup plain greek yogurt or coconut yogurt
  • 2 teaspoons maple syrup, honey or your favorite sweetener
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon, or apple pie spice
  • Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds

Instructions

  1. In a small microwave-safe bowl, combine chopped apple, maple syrup, and a pinch of cinnamon. Heat for 30-60 seconds until apples are slightly soft, then let cool. Reserve 1/4 cup of apple mixture for topping.
  2. In a jar or dish with a lid, mix together oats, almond milk, yogurt, maple syrup, vanilla, and cinnamon.
  3. Stir in 1/4 cup of the prepared cinnamon apples into the oat mixture. Secure the lid and shake the jar to combine ingredients.
  4. Refrigerate overnight (or for at least 30-60 minutes if preparing in the morning).
  5. Before serving, remove the lid and add more yogurt or almond milk if needed. Top with the reserved apples and desired toppings such as nut butter or nuts.

Notes

You can substitute almond milk with any milk of your choice.
For extra sweetness, adjust the amount of maple syrup or honey according to your taste.
This recipe can be prepared a few days in advance for easy breakfasts throughout the week.
