- 4 peaches ripe but firm, halved and pitted
- 3 tablespoons unsalted butter cut into small cubes
- 4 tablespoons brown sugar light or dark
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
- 1 tablespoon maple syrup
- Splash of bourbon
Instructions
- Preheat the oven to 375°F and lightly butter a small baking dish that fits the peaches snugly.
- Place the peach halves cut-side up in the prepared baking dish.
- In a small bowl, combine the brown sugar, cinnamon, and salt; sprinkle this mixture evenly over the peaches.
- Dot each peach half with the cubes of butter, then drizzle with vanilla extract, lemon juice, and bourbon.
- Top the peaches with the remaining brown sugar mixture evenly divided among them.
- Bake for 25 to 30 minutes, or until the peaches are fork-tender and the tops are caramelized.
- Serve warm with vanilla ice cream if desired.
Notes
Using ripe but firm peaches will prevent them from becoming mushy during baking.
