Description

This Beef Burrito offers an irresistible flavor with tender ground beef, zesty spices, and melty cheese, making it an ideal choice for a quick dinner or a satisfying comfort food.


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat oil in a large skillet over medium-high heat. Swirl to coat the pan, then add the beef, pressing it out into a 1/2-inch thickness. Let sizzle for 3 to 4 minutes until a crust forms.
  2. Sprinkle the beef with chili powder, oregano, cumin, salt, garlic powder, and smoked paprika. Add onions on top and break the meat into small pieces with a spatula. Cook for about 4 more minutes until the meat is done.
  3. Mix in beans and salsa, cooking until liquid reduces and beans warm, about 1 minute. Adjust seasoning if needed.
  4. To assemble burritos: Place a tortilla on a flat surface, add 3 tablespoons of cheese in the center, top with 1/6 of the beef/bean mixture, and add some more cheese.
  5. Fold the two sides of the tortilla towards the center, then roll to secure the filling. Repeat with remaining tortillas.
  6. To serve, warm a nonstick skillet over medium heat. Place a burrito seam side down and cook for 1 to 2 minutes until golden, then flip. Let cool slightly before serving with toppings.

Notes

Feel free to customize your burrito with additional toppings like jalapeños or different sauces.
For extra flavor, add some spices to the beans before mixing them in with the meat and salsa.
Make these burritos ahead of time and freeze for a quick meal option later!
