- Preheat your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
- In a mixing bowl, combine the chopped mixed berries, ¼ cup sugar, cornstarch, lemon zest, lemon juice, and vanilla extract to create the filling.
- Roll out the pie dough onto the prepared baking sheet.
- Spoon the berry mixture into the center of the dough, leaving a border around the edges.
- Fold the edges of the dough up over the filling, pleating it as you go to create a rustic look.
- Brush the exposed dough with the egg wash and sprinkle with additional sugar for added sweetness.
