Ingredients

  • 2 cups frozen corn, thawed
  • 1 cup black beans, drained and rinsed
  • 1/4 cup cilantro, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh jalapeño, finely diced (optional)
  • 1/4 cup red bell pepper, finely diced
  • 2 tsp lime juice
  • 2 tsp lemon juice
  • 1/2 tsp salt

Instructions

  1. Thaw the frozen corn completely.
  2. In a mixing bowl, combine the thawed corn and drained black beans.
  3. Add the finely chopped cilantro, red onion, jalapeño, and red bell pepper to the bowl.
  4. Pour in the lime juice and lemon juice, then sprinkle the salt over the mixture.
  5. Mix all the ingredients until well combined.
  6. Let it sit for 10 minutes to meld flavors before serving.

Notes

For an extra kick, add more jalapeño to taste.
