Ingredients

- ¾ cup fresh blueberries
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice. Bring to a boil, then reduce heat and simmer for 10 minutes until blueberries reduce by half.
- Remove from heat and cool for 10 minutes.
- In a blender, mix cottage cheese, maple syrup, cornstarch, and vanilla until smooth.
- Layer the cottage cheese mixture and blueberry sauce in popsicle molds.
- Top with crushed graham cracker pieces.
- Freeze overnight or for at least 5 hours.
Notes
These popsicles can be stored in the freezer for up to 4 weeks.
Feel free to swap fresh blueberries for frozen if needed.
