Description

Treat yourself to these delicious Blueberry Cheesecake Protein Popsicles. With luscious blueberries and creamy cottage cheese, they’re a simple and healthy dessert perfect for hot days!


Ingredients

Scale
  • ¾ cup fresh blueberries
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • ¾ cup 4% cottage cheese
  • 3 tablespoons maple syrup
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla bean paste
  • 1 graham cracker, crushed

Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice. Bring to a boil, then reduce heat and simmer for 10 minutes until blueberries reduce by half.
  2. Remove from heat and cool for 10 minutes.
  3. In a blender, mix cottage cheese, maple syrup, cornstarch, and vanilla until smooth.
  4. Layer the cottage cheese mixture and blueberry sauce in popsicle molds.
  5. Top with crushed graham cracker pieces.
  6. Freeze overnight or for at least 5 hours.

Notes

These popsicles can be stored in the freezer for up to 4 weeks.
Feel free to swap fresh blueberries for frozen if needed.
For a sweeter treat, adjust the maple syrup to taste.
