Description

These Blueberry Crumble Cheesecake Bars offer an irresistible mix of creamy cheesecake and sweet blueberries atop a crumbly oat base. Perfect for a quick dessert or enjoyable snack, they’re easy to make and sure to please everyone!


Ingredients

  • 3/4 cup butter, softened
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cups flour
  • 1 1/3 cups quick oats
  • 1 (8 oz) cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla
  • 1 egg yolk
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F and prepare a 9 x 13 inch pan with non-stick spray.
  2. In a bowl, cream together the softened butter, sugar, and brown sugar. Mix in the baking soda, salt, flour, and quick oats until combined.
  3. Press half of this mixture into the bottom of the prepared pan and bake for 13 minutes.
  4. While the crust is baking, prepare the cream cheese filling.
  5. In another bowl, beat the softened cream cheese with the sweetened condensed milk until smooth. Mix in the vanilla and egg yolk until combined.
  6. Once the crust is done, remove it from the oven and spread the cream cheese filling evenly over the crust.
  7. Sprinkle the blueberries over the cream cheese layer.
  8. Distribute the remaining crumble mixture over the top and press down gently.
  9. Bake for 20-25 minutes until the edges are golden brown.
  10. Allow the bars to cool completely before cutting into squares.

Notes

These bars are best served chilled after baking for a refreshing taste.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Substitute fresh blueberries with other berries if desired for a different flavor.
