- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat the oven to 350°F and prepare a 9 x 13 inch pan with non-stick spray.
- In a bowl, cream together the softened butter, sugar, and brown sugar. Mix in the baking soda, salt, flour, and quick oats until combined.
- Press half of this mixture into the bottom of the prepared pan and bake for 13 minutes.
- While the crust is baking, prepare the cream cheese filling.
- In another bowl, beat the softened cream cheese with the sweetened condensed milk until smooth. Mix in the vanilla and egg yolk until combined.
- Once the crust is done, remove it from the oven and spread the cream cheese filling evenly over the crust.
- Sprinkle the blueberries over the cream cheese layer.
- Distribute the remaining crumble mixture over the top and press down gently.
- Bake for 20-25 minutes until the edges are golden brown.
- Allow the bars to cool completely before cutting into squares.
Notes
These bars are best served chilled after baking for a refreshing taste.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Substitute fresh blueberries with other berries if desired for a different flavor.
