Instructions
- Preheat your oven to 400°F and line a mini muffin pan with mini paper liners.
- In a medium bowl, mix the flour, sugar, baking powder, and salt together well.
- In a separate bowl or a larger measuring cup, whisk the milk, eggs, melted butter, and vanilla extract until combined.
- Add the wet mixture to the dry ingredients and stir until just combined, being careful not to over-mix.
- Gently fold in the blueberries to the batter.
- Fill each muffin liner about two-thirds full with the batter.
- Bake for 10-12 minutes or until they are lightly golden and a toothpick inserted in the center comes out clean.
- Let them cool before serving, or once cooled, top with a vanilla glaze if desired.
Notes
For extra flavor, consider adding a sprinkle of cinnamon to the batter.
