Description

Blueberry Muffin Bites deliver irresistible flavor and easy preparation. Made with fresh blueberries, these bites are perfect for a delightful snack or breakfast treat.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 2 eggs
  • 8 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 400°F and line a mini muffin pan with mini paper liners.
  2. In a medium bowl, mix the flour, sugar, baking powder, and salt together well.
  3. In a separate bowl or a larger measuring cup, whisk the milk, eggs, melted butter, and vanilla extract until combined.
  4. Add the wet mixture to the dry ingredients and stir until just combined, being careful not to over-mix.
  5. Gently fold in the blueberries to the batter.
  6. Fill each muffin liner about two-thirds full with the batter.
  7. Bake for 10-12 minutes or until they are lightly golden and a toothpick inserted in the center comes out clean.
  8. Let them cool before serving, or once cooled, top with a vanilla glaze if desired.

Notes

For extra flavor, consider adding a sprinkle of cinnamon to the batter.
