- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1” overhang for easy removal; set aside.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Add the melted butter and vanilla, stirring to combine.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
- In another large bowl, mix the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the pan, then sprinkle the remaining ⅓ crust mixture on top of the blueberries.
- Bake in the oven for 55 minutes, or until the blueberries are bubbling and the crust has turned golden. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice into 9 bars and enjoy!
Notes
For a gluten-free option, substitute the all-purpose flour with a gluten-free blend.
Serve these bars with a scoop of vanilla ice cream for added indulgence.
