- 1 ½ cups (180 g) graham cracker crumbs
- ⅓ cup (65 g) granulated sugar
- 6 tablespoons (85 g) unsalted butter, melted
- 16 ounces (452 g) brick-style cream cheese, softened to room temperature
- ½ cup (100 g) granulated sugar
- ½ cup (120 g) sour cream, at room temperature
- 1 teaspoon vanilla extract
- 2 large eggs, at room temperature, lightly beaten
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, mix graham cracker crumbs and sugar until combined.
- Pour melted butter over the crumb mixture and stir until moistened.
- Press the crumb mixture into the bottom and sides of a 9-inch pie plate, using a clean measuring cup to pack it firmly.
- Bake the crust for 10 minutes, then take it out of the oven and set aside while preparing the filling.
Notes
Make sure the cream cheese is softened for easier mixing.
You can add a fruit topping after baking for added flavor.
Store leftover cheesecake pie in the refrigerator for up to 3 days.
