Description

Ingredients

  • 3 cups medium shells uncooked
  • 3 tablespoons butter
  • 1 onion finely diced
  • ⅓ cup diced red bell pepper
  • 1 teaspoon chili powder
  • ½ teaspoon seasoned salt
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1⅓ cups milk
  • 3 cups shredded sharp cheddar cheese divided
  • ⅓ cup shredded parmesan cheese
  • 3 cups cooked chopped chicken
  • 4 ounces canned mild green chiles

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the medium shells in boiling water until al dente, following package instructions.
  3. In a skillet set over medium heat, melt the butter. Add the finely diced onion and red bell pepper, cooking until they soften, around 5 minutes. Stir in chili powder and seasoned salt.
  4. In a large mixing bowl, combine the cream of chicken soup with the cooked onion mixture, milk, 2 cups of shredded cheddar cheese, and parmesan cheese. Mix until well combined. Then, fold in the chopped chicken, green chiles, and cooked pasta.
  5. Spread the mixture evenly in a 9×13 inch casserole dish. Sprinkle the remaining shredded cheddar cheese on top.
  6. Bake in the preheated oven for 30 to 35 minutes, or until the casserole is hot and bubbly.

Notes

For extra flavor, consider adding garlic powder or diced jalapeños.
You can substitute rotisserie chicken to save time on prep.
Make sure to keep an eye on the cheese to prevent over-browning.
