- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 tablespoon worcestershire sauce
- 1 teaspoon italian seasoning
- 1 teaspoon beef better than bouillon
- ½ teaspoon crushed red pepper flakes, optional
- 1 (14.5 oz) can petite fire roasted tomatoes
- 3–4 small zucchini, cut into quarter pieces
- 1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion. Use a wooden spoon to break and crumble the meat until no longer pink, draining excess grease if necessary.
- Add the garlic, Worcestershire sauce, Italian seasoning, beef bouillon, red pepper flakes, and tomatoes to the skillet (do not drain the tomatoes!). Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Introduce the zucchini into the skillet, simmer for another 10 minutes until the zucchini begins to soften.
- Sprinkle shredded mozzarella over the top, reduce heat to low, and cover with a lid for 3-5 minutes until the cheese melts. Serve hot.
Notes
For added flavor, use ground turkey instead of beef.
Feel free to add other vegetables like bell peppers or mushrooms to increase the veggie content.
Serve with a side of crusty bread or over rice for a complete meal.
