Description

Ingredients

  • 5 ounces fresh cherries
  • 2 tablespoons brown sugar
  • 1/2 teaspoon almond extract
  • 1 teaspoon lemon juice
  • 2 tablespoons cornstarch
  • 1 sheet of frozen puff pastry (1/2 of a box), defrosted
  • 1 large egg yolk
  • 2 teaspoons heavy cream
  • granulated sugar for sprinkling on top

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Pit the cherries and place them in a bowl. Add brown sugar, almond extract, lemon juice, and cornstarch. Mix well and set aside.
  3. Roll out the defrosted puff pastry on a floured surface until it's about 1/2" larger on all sides. Use a 6" round cutter to make 2 circles and transfer them to a baking sheet lined with parchment paper.
  4. Distribute the cherry filling evenly on one side of each pastry circle, leaving about 1/2" from the edge.
  5. In a small bowl, mix the egg yolk with heavy cream and brush the mixture along the edges of the pastry. Fold over the dough and crimp the edges to seal.
  6. Cut 3 slits in the top of each pie and sprinkle granulated sugar on top.
  7. Bake for 18-21 minutes until golden and puffed, then let cool for 10 minutes before serving.

Notes

Make sure the cherries are pitted completely to avoid any tough bites.
You can substitute other fruits if desired, but cherries give a lovely tart flavor.
Serve warm for the best taste; let them cool slightly to avoid burns from the hot filling.
