- Preheat the oven to 350°F and prepare a 9×5-inch loaf pan with nonstick spray.
- In a medium bowl, mix the flour, baking powder, baking soda, and salt.
- In another bowl, whisk the brown sugar, granulated sugar, oil, vanilla, and eggs until smooth.
- Combine the wet and dry ingredients, stirring until just mixed; expect a thick batter.
- Gently fold in the grated zucchini to incorporate.
- Stir in 1 ¼ cups of chocolate chips, then pour the batter into the prepared pan. Top with remaining chocolate chips, pressing them slightly into the batter.
- Bake for 65 to 75 minutes, checking with a toothpick for doneness. If browning too fast, tent with foil.
- Cool in the pan for 15 to 20 minutes before transferring to a wire rack to cool completely before slicing.
