  • 1/3 cup mashed banana (about 1 banana)
  • 1/4 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (about 1 small zucchini)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Lightly grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine the oil, mashed banana, buttermilk, egg, and vanilla extract.
  4. Grate and measure the zucchini, then squeeze it to remove excess moisture before adding it to the wet ingredients.
  5. Combine the wet and dry ingredients along with the chocolate chips, mixing until just combined.
  6. Divide the batter into the muffin cups, filling them about two-thirds full, and bake for 17-18 minutes until done.
  7. Allow the muffins to cool on a rack before serving.

Notes

Feel free to substitute whole wheat flour for a healthier option.
