Description

This Classic Caesar Salad is a delightful mix of fresh romaine lettuce, creamy dressing, and crunchy croutons, making it an ideal choice for a quick lunch or a healthy dinner. Enjoy simple ingredients and irresistible flavors in this homemade favorite!


Ingredients

  • 1 large egg yolk
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup olive oil
  • 1 teaspoon anchovy paste
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, grated
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon cracked black pepper
  • Salt to taste
  • 910 oz. romaine lettuce, chopped (~5 cups)
  • 1/2 cup shredded parmesan cheese
  • 1 cup croutons

Instructions

  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until frothy.
  2. Gradually drizzle olive oil into the mixture while whisking vigorously to thicken the dressing.
  3. Incorporate the anchovy paste, grated parmesan cheese, grated garlic, Worcestershire sauce, and cracked black pepper into the dressing. Mix well and add salt to taste. Set aside.

Notes

For a creamier dressing, add more olive oil up to 3/4 cup.
Feel free to substitute fresh lemon juice with lime for a different citrus twist.
The salad is best enjoyed fresh, but the dressing can be refrigerated for a few days.
