Description

Creamy Chicken Orzo Bake is a delightful dish featuring tender chicken, creamy soup, and orzo pasta. It’s a quick and comforting meal, perfect for busy nights with family or friends.


Ingredients

  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 (10.5 oz) can cream of chicken and herb soup
  • 1 1/2 cups orzo
  • 1 (8 oz) can mushrooms (well drained)
  • 1 (2 oz) packet Lipton onion soup mix (dry mix only)
  • 1 1/2 lbs boneless, skinless, thin chicken breasts (or chicken cutlets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 casserole dish with nonstick spray. Set aside.
  2. In a bowl, whisk together the chicken broth, white wine, and cream of chicken soup until well combined. Mix in the orzo, mushrooms, and onion soup mix, then pour into the prepared casserole dish.
  3. Season both sides of the chicken with garlic powder, onion powder, salt, and pepper, and place it on top of the orzo mixture. Cover the dish tightly with foil.
  4. Bake in the preheated oven for 55 to 60 minutes, removing the foil after 30 minutes. Check the chicken for doneness and ensure the orzo is tender and most of the liquid is absorbed. If needed, bake uncovered for an additional 5 minutes.
  5. Once cooked, turn off the oven and sprinkle mozzarella and parmesan cheese on top of the chicken. Return to the warm oven for 3 to 5 minutes, or until the cheese is melted.
  6. Remove from the oven, let it rest for 5 minutes, then fluff the orzo with a fork before serving. Garnish with extra parmesan cheese and chopped parsley, if desired.

Notes

Feel free to substitute the chicken with turkey or keep it vegetarian by using vegetable broth and omitting the meat.
Store leftovers in an airtight container in the fridge for up to 3 days.
For added flavor, consider adding fresh herbs or a squeeze of lemon before serving.
