- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, for garnish
- Tajin, for garnish
- crumbled cotija cheese, or queso fresco, for garnish
Instructions
- Preheat the oven to 400°F.
- Arrange the corn on a large baking sheet. Coat each ear with softened butter, then season with salt and pepper.
- Roast the corn at 400°F for 20 minutes. For extra char, turn on the broiler in the last 2 minutes while watching closely to prevent burning. Rotate the corn for even charring.
- Once roasted, take the corn out of the oven, generously spread cilantro lime crema over each ear, and add your favorite toppings. Serve and enjoy!
