- 1/2 pound rotini pasta
- 1 cucumber, thinly sliced
- 1/2 sweet white onion, thinly sliced
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tsp sugar
- 1/2 tsp salt
- 2 tbsp dill
- 2 tbsp white vinegar
Instructions
- Cook the rotini pasta according to package directions until al dente, then rinse under cold water to cool.
- Slice the cucumber in half lengthwise, remove the seeds, and then cut it into thin slices.
- Thinly slice the onion and soak it in a bowl of cold water.
- In a small bowl, whisk together sour cream, mayonnaise, sugar, salt, dill, and white vinegar.
- In a large bowl, combine all ingredients, tossing them gently. Allow the salad to chill in the refrigerator for 45 minutes before serving.
Notes
For added flavor, consider using Greek yogurt instead of sour cream.
