- 1 (10-ounce) can mild diced tomatoes with green chiles
- 3 bell peppers (green, yellow, and red, sliced into strips)
- 1 large yellow onion (sliced)
- 4 cloves garlic (minced)
- 1 ½ pounds boneless skinless chicken breasts
- 1 (1.25-ounce) packet fajita seasoning mix
- ½ teaspoon black pepper
- 2 tablespoons fresh lime juice (1 lime)
- Soft shell fajita tortillas (warmed, optional for serving)
- Fresh chopped cilantro (optional for serving)
- Sour cream (optional for serving)
Instructions
- Place the diced tomatoes, sliced peppers, sliced onion, minced garlic, and chicken in a slow cooker.
- Evenly distribute the fajita seasoning and black pepper over the chicken, then drizzle the lime juice on top.
- Cover and cook on low for 6–8 hours or on high for about 4 hours, until the chicken is cooked through and tender.
- Once cooked, remove the chicken and shred it with two forks before returning it to the slow cooker, mixing it with juices and vegetables.
- Serve in warmed tortillas, garnished with cilantro and sour cream if desired.
Notes
For extra flavor, marinate the chicken in the fajita seasoning overnight before cooking.
Feel free to customize the vegetables by adding zucchini or corn according to your preference.
