Description

Ingredients

  • 2 ½ cups diced apples (about 3 small/medium apples, peeled and cored)
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cup all-purpose flour (62g)
  • ½ cup packed brown sugar (100g)
  • ¼ teaspoon salt
  • 3 tablespoons unsalted butter, melted (42g)
  • 2 large eggs
  • 1 cup granulated sugar (200g)
  • ½ cup vegetable oil (118ml)
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup sour cream (245g)
  • 2 cups all-purpose flour (248g)

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. For the apples, combine the diced apples in a medium-sized microwave-safe bowl with about ½ inch of water and microwave for 2 minutes until slightly translucent. Drain and sprinkle with cinnamon and sugar. Set aside.
  3. For the topping, mix all topping ingredients in a medium bowl using a fork. Set aside.
  4. In a bowl, combine eggs with sugar and oil, mixing until creamy. Add vanilla, vinegar, baking soda, cinnamon, and salt. Incorporate sour cream, then gently mix in flour using a wooden spoon until just combined (batter may be lumpy). Stir in the apples.
  5. Fill the muffin cups two-thirds full with batter—about ¼ cup per cup. Sprinkle the crumble topping evenly over the muffins.
  6. Bake for 15-19 minutes until a toothpick inserted in the center comes out clean. Let cool for 5 minutes in the pan before transferring to a rack to cool completely.
  7. Store muffins in an airtight container for up to 3 days or freeze for up to one month.

Notes

Ensure the apples are diced very small for even cooking and flavor distribution.
The batter will be slightly lumpy; avoid overmixing to keep the muffins tender.
For a variation, add nuts or raisins to the batter before baking.
