- 1 cup sour cream (245g)
- 2 cups all-purpose flour (248g)
Instructions
- Preheat the oven to 350°F and line muffin pans with paper baking cups.
- For the apples, combine the diced apples in a medium-sized microwave-safe bowl with about ½ inch of water and microwave for 2 minutes until slightly translucent. Drain and sprinkle with cinnamon and sugar. Set aside.
- For the topping, mix all topping ingredients in a medium bowl using a fork. Set aside.
- In a bowl, combine eggs with sugar and oil, mixing until creamy. Add vanilla, vinegar, baking soda, cinnamon, and salt. Incorporate sour cream, then gently mix in flour using a wooden spoon until just combined (batter may be lumpy). Stir in the apples.
- Fill the muffin cups two-thirds full with batter—about ¼ cup per cup. Sprinkle the crumble topping evenly over the muffins.
- Bake for 15-19 minutes until a toothpick inserted in the center comes out clean. Let cool for 5 minutes in the pan before transferring to a rack to cool completely.
- Store muffins in an airtight container for up to 3 days or freeze for up to one month.

Ensure the apples are diced very small for even cooking and flavor distribution.
The batter will be slightly lumpy; avoid overmixing to keep the muffins tender.
