Description

This Easy Blackberry Pie features a flaky crust and a sweet blackberry filling, offering a delightful and easy dessert for any occasion. Perfect for sharing with friends and family, it’s a simple yet scrumptious addition to your dessert menu.


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. Combine flour, sugar, and salt in a food processor and pulse to mix.
  2. Add cold, diced butter and blend until coarse crumbs form.
  3. Pour in cold water and pulse until moist clumps appear.
  4. Transfer the dough to parchment paper, divide, and shape into balls. Flatten into discs without kneading.
  5. Wrap each disc in plastic wrap and chill for 1 hour.
  6. Preheat the oven to 400 degrees Fahrenheit when ready to use the crust.
  7. To prepare the blackberry filling, combine water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Gently stir in sugar and cornstarch; cook until thickened. Set aside.
  9. Roll out the bottom crust to a 12-inch circle and transfer it to a 9-inch pie plate.
  10. Spread the blackberry mixture evenly over the crust, avoiding the edges.
  11. Roll out the top crust and place it over the pie, trimming excess edges.
  12. Pinch or fork the edges to seal the pie.
  13. Whisk together the egg and water, then brush over the top crust.
  14. (Optional) Sprinkle sugar over the pie.
  15. Cut a few slits in the center to allow steam to escape.
  16. Bake for 15 minutes, then reduce the temperature to 350 degrees and bake for an additional 45-50 minutes until bubbly and golden brown.
  17. Check at 30 minutes; if the crust is browning quickly, cover with foil.
  18. Cool the pie at room temperature before slicing.

Notes

For an extra touch, serve with vanilla ice cream or whipped cream.
Ensure to chill the dough for best results in flakiness.
You can use frozen blackberries if fresh ones are unavailable.
