  • 5 graham cracker sheets
  • 1 box of brownie mix for an 8×8 inch pan
  • 2 egg yolk
  • 1/2 cup vegetable oil or melted butter
  • 1/3 cup brewed hot coffee
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat the oven to 325°F and line the bottom of an 8×8 inch baking pan with parchment paper or aluminum foil, leaving an overhang for easy removal.
  2. Place the graham cracker sheets in a single layer at the bottom of the pan, breaking them as needed to cover the surface.
  3. In a large bowl, combine the brownie mix, egg yolks, hot brewed coffee, vegetable oil, vanilla extract, and salt. Fold in the chocolate chips.
  4. Pour the brownie batter over the graham cracker layer in the pan and bake for 40 minutes.
  5. Remove the brownies and top with mini marshmallows. Return to the oven and bake for an additional 3-4 minutes.
  6. Use a kitchen torch to toast the marshmallows on top. Let the brownies cool completely before slicing.
